Let’s Talk Protein + Tasty Recipe!

Protein is critical for athletes because maintenance, repair and growth of lean muscle mass all depend on protein.  Low dietary protein lengthens recovery time, causes muscle weakness and suppresses the immune system,

Here are some great ways to add protein to your diet:

  • Eat your protein first at each meal
  • Replace cereal in the morning with eggs
  • Replace regular yogurt with greek yogurt
  • Add a protein rich source like meat or beans to your salad
  • Add a scoop of protein powder, such as Driven, to a breakfast smoothie

Mexican Meatloaf
4 servings

Macro Breakdown per serving:
Calories = 330g
Protein = 29g
Fat = 12g

Ingredients:

  • 8oz ground turkey
  • 1 cup(s) black beans (cooked)
  • 1½ cup(s) corn Carbs = 30.5g
  • ½ cup(s) salsa
  • ½ cup(s) bread crumbs
  • 1 whole egg(s) 
  • 4 cup(s) fresh green beans
  • 0.5 oz taco seasoning
  • 14 oz Enchilada sauce
  • 8oz ground chicken

Directions:

  1. Preheat oven to 400. Spray a 8×4 inch baking dish with cooking spray.  Drain and rinse beans.
  2. In a large bowl, mix together meat, beans, corn, salsa, taco seasoning, bread crumbs and egg.
  3. Place mixture into a loaf shape in the baking dish and pour half of the enchilada sauce over the loaf.
  4. Bake for 45 minutes.
  5. Pour the remaining sauce over the loaf and return to the oven until the meat is cooked through- about 10-15 more minutes. Meanwhile, steam green beans.
  6. Slice and serve with fresh veggies!  Pour sauce from the pan over the loaf.
